About Purple Cow Texas

Many of the popular favorites you love today were created more than 20 years ago by classically-trained chef Paul Bash. He and businessman Ed Moore had a vision for serving simple dishes in a fresh new way, with friendly service and a casual atmosphere. The Purple Cow opened its doors in 1989 in Little Rock, and the cheerful diner with the purple shakes has been a beloved mainstay ever since.

The Purple Cow moved west in 1998 with the help of Don Lindsley and Vicki Bell. Don is a Dallas native with an accounting background, but had become an area restaurateur in recent years. Vicki has been with The Purple Cow since its original location, moving to the Dallas area in 2004 to continue building the team.

Today there are three locations in Texas, and a fourth opening soon. They all hold true to the original vision, and have earned plenty of fans and recognition along the way. Highlights include:

  • Preston Royal Village location featured in Decade of Dallas
  • From-scratch dishes that mix comfort and cuisine
  • Legends of American Food Culture tribute to Paul Bash and Ed Moore
  • Original recipes, like the Caesar dressing and herb butter, that remain legendary favorites
